Our Favorite Seafood Recipes!

from Captain Allen and April of A and B Charters

Shrimp with Greek Style Pasta

1/4 cup olive oil
1 tablespoon minced garlic
1 pound medium shrimp, peeled & deveined
1 1/2 cup drained canned artichoke hearts, chopped
1/2 cup chopped seeded tomatoes
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley
1 teaspoon oregano
1 cup crumbled feta cheese
12 oz capellini or linguine

Heat oil in heavy large skillet over medium-high heat. Add garlic and shrimp and sauté for 2 minutes. Add artichokes, tomatoes, lemon juice, parsley, oregano and sauté until shrimp are cooked through about 2 more minutes.

Meanwhile cook pasta until tender and drain well. Transfer pasta to a large bowl.

Add shrimp mixture to pasta and toss to coat. Top with feta cheese and season to taste with salt and pepper. Serves four. 

 

Gingered Plum-Glazed Grouper

4 Grouper Fillets, about 1 inch thick
3/4 cup red plum jam
1 tablespoon vinegar
1/2 teaspoon grated fresh ginger
(or 1/4 teaspoon ground ginger)
1/2 teaspoon crushed red pepper
1/4 teaspoon garlic powder
cooking oil

For glaze, in a small saucepan combine plum jam, vinegar, ginger, red pepper, and garlic powder. Bring mixture to a boil, stirring constantly. Then remove from heat.

Lightly brush fish with oil and broil for 4 - 5 minutes. Use a wide spatula to carefully turn fish over. Brush with plum glaze and broil for another 4 - 5 minutes or until cooked through. Serve Grouper with plum glaze. Serves four.

Orange - Cumin Grouper

4 Grouper fillets, 1 inch thick
2 teaspoons cornstarch
1 teaspoon brown sugar

1/4 teaspoon ground cumin
3/4 cup orange juice
olive or cooking oil

For sauce, in a small saucepan combine cornstarch, sugar, cumin. Stir in orange juice and cook over medium heat until thickened. Stir and continue to cook for another 2 minutes. Remove from heat and cover to keep warm while cooking fish.

Brush fish with oil and broil 4 - 5 minutes each side. To serve, spoon sauce over fish and garnish with orange twist if desired. Serves four.
